Protein Focus

18 hours Lecture/Demonstration
4-4 1/2 hour classes (may be taken individually or as a course)
Prerequisite:
The Main Course

We teach cooking from the plant perspective. Once you learn the cooking methods in the Main Course, applying them to the protein category is easy and exponential. This is an opportunity to study the protein of choice.

  • Plant Protein: Tofu, Tempeh, Seitan (protein from spelt)
  • Fish and Shellfish
  • Poultry: Chicken, Turkey
  • Red Meat: Bison, Lamb
